Ingredients • ½ gallon whole milk (make sure it’s NOT ultra-pasteurized) • ½ cup white vinegar • Optional: 1 tsp salt Instructions 1. Add the milk to a large pot and slowly heat it to 120°F (49°C), stirring occasionally so it doesn’t burn. 2. Take it off the heat, add the vinegar, and stir for about 30 seconds until curds form and separate from the whey. 3. Cover the pot and let it rest for 15 minutes. 4. Remove the curds and squeeze out as much liquid as possible. Mix in salt here if using. 5. Place the curds in a bowl and microwave for 30 seconds. Stretch and fold the cheese a few times until it’s smooth and stretchy. 6. Form into a ball and transfer to an ice bath for 15 minutes to firm up. #mozzarella #homemade
